Combine all the marinade ingredients
Cut belly into 1.5cm squares and add to marinade
Coat, cover, and refrigerate for at least one hour, or overnight
Remove pork from fridge ½ hour before cooking
Boil 2 cups of water in medium pot and cook noodles according to packet. Reserve ⅛ of pasta water
While pasta is still super hot, add egg yolk and mix quickly to make a creamy sauce
Poach egg until just set, about 3 - 4 minutes
Heat pan on high, add a little oil and when almost smoking, cook pork in two batches, frying on all sides, getting a little charred
Serve noodles, pork, poached egg, spring onions, pinch of sesame seeds & a drizzle of sesame oil over top!
