Preheat oven to 400 degrees.
Peel the carrots, trim off the ends, and cut in half lengthwise or in thirds.
Place the carrots in a large roasting pan or dish.
Toss the carrots in maple syrup, olive oil, salt, pepper and thyme.
Roast for 40 minutes, turning the carrots a couple of times throughout until they are fork tender.
In a small bowl, combine the gochujang and maple syrup and mix well.
Pour the hot maple glaze over the roasted carrots.
Garnish with everything bagel seasoning and serve.
