Hot Maple Roasted Carrots
  1. Preheat oven to 400 degrees.

  2. Peel the carrots, trim off the ends, and cut in half lengthwise or in thirds.

  3. Place the carrots in a large roasting pan or dish.

  4. Toss the carrots in maple syrup, olive oil, salt, pepper and thyme.

  5. Roast for 40 minutes, turning the carrots a couple of times throughout until they are fork tender.

  6. In a small bowl, combine the gochujang and maple syrup and mix well.

  7. Pour the hot maple glaze over the roasted carrots.

  8. Garnish with everything bagel seasoning and serve.
