Coconut Loaf
  1. Preheat oven to 180C

  2. Whisk sugar with all the liquid ingredients and eggs for 2-3 minutes

  3. Add sifted dry ingredients and desiccated coconut and fold till just mixed through

  4. Pour into a paper lined 9x3 loaf tin

  5. Bake for 40-45 minutes or till a toothpick inserted in the center comes out with very few moist crumbs

  6. Let the cake cool completely

  7. Pour over the icing and sprinkle with more desiccated coconut

  8. Let the icing set

  9. Serve and enjoy
