Pre-heat oven to 180C / 350F
Cut the tops of the garlic bulbs and place a drizzle of olive oil on each
Wrap both garlic bulbs in tin foil or baking paper
Bake for 45 minutes until soft
Allow to cool for 15 minutes until cool enough to touch
Squeeze out the roasted garlic into a bowl with softened butter
Add chopped parsley, salt and pepper and mix together
Cut ciabatta in half and spread garlic butter mixture on both halves
Grate cheese on top
Bake for 15-20 minutes until cheese is golden
Optional: finish under the grill for extra golden cheese
Drizzle honey on top, slice and serve
