Place 2½ cups of Coke (any flavor) in a small sauce pan and bring to a boil. Let boil until reduced to a syrup, about 8-10 minutes. Syrup will continue to thicken once removed from the heat.
Cream together butter, sugar, and vanilla until smooth. Add egg and Coke reduction and beat till combined.
Sift flour, cocoa powder, and baking powder directly into bowl and mix on medium low until combined. Fold in chocolate chips.
Using a medium or 2 Tbs cookie scoop, scoop dough onto lined cookie sheet then bake at 350 degrees for 15 minutes.
