Heat your oven to 160°C and line two baking trays with parchment paper.
Add the oats, nuts, seeds, raisins, salt and cinnamon to a large mixing bowl and stir everything together.
In a small pan, combine the honey, olive oil and peanut butter. Warm gently over a medium heat, stirring until smooth and blended. Remove from the heat and mix in the vanilla extract.
Pour the warm honey mixture over the dry ingredients and stir well so everything is evenly coated.
Divide the mixture between the prepared trays, spreading it out into an even layer. Bake for 20 minutes, give it a stir, then return to the oven for another 10 minutes.
Take the trays out and leave the granola to cool fully, it will crisp up as it cools - then break into clusters and pack into your favourite Kilner jar!
