Creamy Tzatziki Chickpea Salad
  1. Combine canned chickpeas, cucumber, dill, mint and shallot in a large bowl.

  2. Add yoghurt, honey, lemon juice and garlic. Season. Stir until well combined.

  3. Transfer the salad to a large serving plate or bowl.

  4. Top with extra green shallot and roasted chickpeas, to serve.
