Heat 1 Tbsp olive oil in a large skillet over medium high heat. Add sausage and cook till browned, about 3-4 minutes per side. Remove to a plate.
Add remaining 2 Tbsp olive oil to the skillet, then add in onion, cabbage, bell peppers and garlic. Sauté till onion softens, about 5 minutes.
Add diced tomatoes, chicken broth and Creole seasoning. Mix well. Cover, bring to a simmer, reduce heat to medium low, and cook till cabbage has softened, about 8-10 minutes.
Stir sausage back into skillet. Serve immediately.
