Blooming Beautiful Berry Muffs
  1. Preheat oven to 200°C and line a regular 12 cup or large 6 cup muffin tin with liners or baking paper

  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside

  3. In a small bowl, coat the berries with 1 tbsp of the dry mix

  4. In a large bowl, beat the butter and sugar until lighter and fluffier, then add in eggs, beating until fluffy and combined

  5. Beat in vanilla

  6. Add dry mix in 3 parts, alternating with milk in two parts

  7. Once combined, stir through berries

  8. Divide mix between muff cups

  9. Sprinkle with sugar or streusel

  10. Bake for 20 - 25 minutes

  11. Allow to cool for 5 minutes before removing from tin
