Cook the bacon until crispy
Chop the onions and cook them in the bacon fat until caramelized
Add the brown sugar, apple cider vinegar, coffee, and thyme to the onions and cook until thickened into a jam-like consistency
In a separate bowl, whip the goat cheese and heavy cream until light and fluffy
Top the whipped goat cheese with the bacon jam
Serve with crostini or crackers
