Place the aquafaba, chickpeas, red peppers, lemon juice, garlic, spices, and salt in a high speed blender or food processor and blend until the ingredients are broken down. It will not be smooth at this point.
Add in the olive oil and water and purée until smooth. Taste for seasoning and add additional salt, lemon juice or olive oil as needed.
Top the hummus with chopped roasted red peppers, olive oil, and za'atar if desired. Serve with warm pita bread and vegetables.
