In a large pot, heat olive oil over medium heat. Add kielbasa slices and cook until browned on both sides, about 5 minutes. Remove from the pot and set aside.
In the same pot, add chopped onion and minced garlic. Sauté for 3-4 minutes until softened.
Stir in chicken broth, diced potatoes, sauerkraut, caraway seeds (if using), black pepper, and paprika. Bring to a boil, then reduce heat to a simmer and cook for 10 minutes, or until potatoes are tender.
Return the browned kielbasa to the pot and simmer for another 5-10 minutes to heat through and meld the flavors.
Taste and adjust seasoning with salt, if needed. Serve hot.
