Cook the Chicken:
In a large skillet over medium heat, add the olive oil and ground chicken. Cook for about 10-12 minutes, breaking up the chicken into small pieces, until fully cooked and no longer pink. Transfer the cooked chicken to a plate and set aside.
Prepare Alfredo Sauce: 2. In the same skillet, reduce the heat to medium-low. Melt the butter, then add the minced garlic, cooking for 1-2 minutes until fragrant. 3. Stir in the heavy cream and prepared Alfredo sauce, mixing until smooth. Add the Italian seasoning and stir to combine.
Add Chicken and Seasonings: 4. Return the cooked chicken to the skillet with the Alfredo sauce. Stir to coat the chicken evenly in the sauce. Season with salt and pepper to taste, and cook for another 2-3 minutes until heated through.
Toast the Buns: 5. While the chicken mixture is warming, slice and toast the buns until golden brown.
Assemble Sloppy Joes: 6. Spoon a generous amount of the chicken Alfredo mixture onto the bottom half of each toasted bun. Top with the other half of the bun and serve warm.
