Prepare both sous vide recipes at the same time (cook at least 12 minutes, but can hold longer if needed).
While that’s cooking, toast muffins and place on sheet pan, top with ham and keep warm in 300 F oven.
When done, remove eggs to cool until able to handle. Empty contents of sauce bag into blender and blend for 1 minutes or until smooth.
Remove muffins from oven. Crack an egg on each muffin and top with sauce and chives. Serve immediately.
