Cajun Potato Soup
  1. In a large pot, heat olive oil or butter over medium heat.

  2. Add diced andouille sausage and cook until browned.

  3. Add chopped vegetables (celery, bell peppers, onions) and sauté until softened.

  4. Stir in diced potatoes and Cajun spices, then pour in enough water or broth to cover; bring to a boil.

  5. Reduce heat and let simmer until the potatoes are tender.

  6. Stir in heavy cream and shredded cheddar cheese until melted and creamy.

  7. Season with salt and black pepper to taste.

  8. Serve hot in bowls, topped with additional cheddar cheese, green onions, or hot sauce if desired.
