Creamy White Chicken Enchiladas
  1. Preheat your oven to 350°F and lightly grease a 9×13 inch baking dish.

  2. In a large bowl, mix shredded chicken, cream cheese, garlic powder, onion powder, and 1 cup Monterey Jack cheese until creamy and combined.

  3. Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes until lightly golden.

  4. Add taco seasoning and slowly whisk in chicken broth. Simmer for 3-4 minutes until slightly thickened.

  5. Stir in 1 cup Monterey Jack cheese until smooth.

  6. Remove sauce from heat and let it cool briefly. Whisk in sour cream and stir in green chiles until combined.

  7. Warm tortillas for 20 seconds to make them flexible. Fill each with about ⅓ cup chicken mixture, roll, and place seam-side down in the baking dish.

  8. Pour sauce evenly over the enchiladas and sprinkle the remaining ½ cup cheese on top.

  9. Bake uncovered for 22-25 minutes until bubbling and heated through.

  10. Broil for 2 minutes until the top is lightly golden and slightly crisp.

  11. Let rest for 5 minutes before serving.
