Season thinly cut chicken breast generously on each side with cajun seasoning and olive oil, mix well until fully coated
Cook the chicken on medium-high heat for approximately 4 minutes on each side, then set aside
In the same pan with chicken juices, cook diced brown onion, diced capsicum/bell peppers and diced garlic cloves until softened
Add light butter with cajun seasoning to the pan and let toast for approximately 1 minute, then add cooked white rice and mix well until incorporated
In a separate pan on medium heat, add light butter with cajun seasoning, then add evaporated milk with cajun seasoning, smoked paprika, parmesan cheese and mix until smooth and creamy
Equally distribute the chicken, rice and sauce into 6 servings and sprinkle with parsley flakes
