Zucchini, Cheese, And Egg Skillet
  1. Shave ribbons of zucchini using a peeler.

  2. Add a little olive oil to a skillet and cook the zucchini ribbons until softened and starting to get some color.

  3. Form the zucchini ribbon pile into 2 piles with a divot in the middle.

  4. Add shredded cheese (such as feta) to the divot in the middle, cover and cook for a minute or so until the cheese melts.

  5. Remove the cover and drop an egg in the middle of each zucchini pile.

  6. Season with salt and pepper.

  7. Drizzle with chili oil (such as Fly By Jing's Sweet and Spicy Sichuan Sauce).

  8. Cover and cook until the egg is set to your liking.

  9. Top with chives.

  10. For the boys, cook some bacon until crisp, crumble it and sprinkle it on top.
