Preheat oven to 350°F.
Butter the bottom of a baking dish.
Place the bottom halves of the sliced mini croissants in the dish.
Layer with smoked ham, then sprinkle evenly with shredded mozzarella.
Top with the croissant tops.
In a bowl, whisk together 5 eggs, salt, pepper, garlic powder, onion powder, and paprika.
Slowly pour the egg mixture evenly over the croissants, allowing it to soak in.
Bake uncovered for 25–30 minutes, until the eggs are set to your desired doneness.
Remove from oven and brush melted butter over the tops of the croissants.
Top with chopped chives.
Let rest for a few minutes, then cut into squares and serve.
