In a bowl add the water, yeast and sugar and mix
Add in the flour and salt and mix to combine
Start kneading with your hand until the dough is soft but tacky, making sure your hands don't stick
Place in a lightly oiled bowl and leave to proof in a dark warm place for an hour or until doubled in size
Turn the dough over onto a lightly floured surface and fold it over a few times to form a smooth ball
Divide into 8 portions
Roll each one out into the size of a small dinner plate for a thicker aish or larger for a thinner one
Sprinkle with flour and cover to rest for 10 minutes
If using a pizza oven: preheat, place inside and cook for 1 minute and a half
If using a skillet: lightly oil and wipe away any excess, heat to high, place the dough on top and turn over every 10 seconds or so, covering as you cook
