Traditional Welsh Bara Brith
  1. ☕ Soak the Fruit: Place the mixed dried fruit in a large bowl. Pour over the brewed tea, cover, and leave to soak overnight or for at least 6 hours. This ensures the fruit is plump and juicy!

  2. 🔥 Preheat the Oven: Preheat your oven to 160°C (fan) or 140°C (gas mark 3). Grease and line a 900g (2lb) loaf tin with baking paper.

  3. 🥣 Mix the Ingredients: Stir the dark brown sugar into the soaked fruit and tea mixture until dissolved. Add the beaten egg, then sift in the self-raising flour and mixed spice. Gently mix until just combined.

  4. 🍞 Bake: Pour the mixture into the prepared loaf tin and smooth the top. Bake for 1 hour 30 minutes, or until a skewer inserted into the centre comes out clean. If the top browns too quickly, cover it with foil halfway through baking.

  5. ❄️ Cool: Leave the Bara Brith to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
