Easy Victoria Sponge
  1. Cream the butter and sugar together until light and fluffy.

  2. Add the vanilla and milk.

  3. Beat in the eggs, then fold in the flour.

  4. Divide evenly between two lined tins.

  5. Bake at 160°C for around 25–30 minutes until golden and cooked through.

  6. Leave to cool completely.

  7. Whip the cream with icing sugar and vanilla to make Chantilly cream.

  8. Spread jam on one layer, add the cream and strawberries, then sandwich together and dust with icing sugar.
