One Pan Lemony Salmon Orzo
  1. Pat the salmon dry and season both sides with the salt, pepper, and paprika.

  2. Heat the olive oil in a large skillet over medium heat, then add a square of parchment paper and turn to coat both sides.

  3. Place the salmon on the parchment and cook for 4 minutes, then flip and cook for 4 minutes more, depending on your desired doneness.

  4. Transfer the salmon to a plate and discard the parchment.

  5. Add the onion to the same skillet and sauté for 2 minutes, until beginning to soften.

  6. Add the garlic, orzo, and thyme, stirring to lightly toast the orzo.

  7. Add the broth and lemon juice and bring to a gentle boil.

  8. Reduce the heat to low and cook for about 8 minutes, or until the orzo is al dente and most of the liquid has been absorbed.

  9. Stir in the Parmesan and spinach until the spinach wilts, then return the salmon to the skillet and serve.
