Preheat oven to 350 and line a baking sheet with parchment.
Whisk eggs, then add cottage cheese, mozzarella, Parmesan, and everything bagel seating and mix.
Add almond flour (or regular flour), baking powder and salt and gently mix together before combining it in with the wet ingredients.
Allow mixture to sit for 10-15 minutes for maximum fluffiness.
Scoop ¼ cup mixture onto baking sheet and gently form into a rounded shape.
Top with more bagel seasoning.
Bake for 15-18 minutes until lightly browned.
