Instructions
Bring water to a boil.
Lower eggs in gently and boil 6½–7 minutes.
Transfer to ice bath for 5 minutes.
Peel and set aside.
Preheat broiler to HIGH.
Slice pork into ½-inch strips.
Pat dry and season with salt and pepper.
Toss lightly with cornstarch.
Arrange on foil-lined sheet pan and drizzle with oil.
Broil 4–6 minutes. Flip and broil 3–5 more minutes until browned and crisp.
Combine chili crunch, honey, and soy sauce in small saucepan.
Heat until gently bubbling, 30–60 seconds.
Toss pork in glaze just before serving.
Sauté garlic and ginger in a little oil for 30 seconds.
Add broth, soy sauce, honey, rice vinegar, and chili crunch.
Simmer 8–10 minutes.
Cook noodles according to package directions.
Divide noodles between bowls.
Ladle hot broth over noodles.
Halve eggs and add to bowls.
Top with crispy sweet-spicy pork.
Garnish with green onions and extra chili crunch if desired.
