Preheat oven to 425°F. Pound chicken to ½-inch thickness and season with salt and pepper.
Whisk eggs in a shallow bowl. In another bowl, mix panko, Italian breadcrumbs, and Parmesan.
Dip chicken in eggs, then in breadcrumb mixture to coat.
Place on baking sheet, spray with cooking spray. Bake 15 minutes.
On a second tray, pour marinara and top with cheese. Bake 8–10 mins.
Top crispy chicken with marinara-cheese mixture. Garnish with parsley. Serve warm.
