Prep the ginger by chopping it up in a food processor, skin and all
Add 500ml of water, 1 to 2 tablespoons of sugar, and 1 to 2 tablespoons of ginger to a jar
Mix and loosely cover, then set aside in a dark cupboard overnight
Add another tablespoon of sugar and ginger, mix, and set aside again
Repeat this process every day for about five days until you see gas production
Do one last top up, leave it overnight, and it's ready to make ginger beer
