  1. Season the ground lamb with salt and pepper.

  2. Add the grated onion, grated garlic, chopped parsley, chopped mint, lemon zest, feta cheese (if using), cumin, smoked paprika, Aleppo pepper, onion powder, ground coriander (optional), ground cinnamon (optional), and cayenne pepper (optional). Mix well and drizzle with 1 tbsp olive oil.

  3. In a separate bowl, mix together the Greek yogurt, grated garlic, lemon juice, salt, pepper, and ½ tbsp olive oil for the garlic yogurt sauce.

  4. Cut the pita bread in half and form into pockets.

  5. Stuff the pita pockets with the lamb mixture.

  6. Heat a pan with olive oil over medium-high heat. Add the stuffed pita pockets and sear for 3-4 minutes per side, making sure to sear the cross-section as well.

  7. Cut the seared pita pockets in half and serve with the garlic yogurt sauce, lemon wedges, and pickled onions.
