Old Fashioned Mac and Cheese
Ingredients:
8 oz elbow macaroni
¼ cup all-purpose flour
2 cups whole milk
1 cup heavy cream
4 tablespoons unsalted butter
3 cups shredded cheddar cheese (sharp or mild, as preferred)
½ teaspoon salt, or to taste
¼ teaspoon black pepper
¼ teaspoon paprika (optional, for a hint of warmth)
¼ cup breadcrumbs (optional, for topping)
Directions:
Cook the pasta: Bring a large pot of salted water to a boil. Add macaroni and cook according to package instructions until al dente. Drain and set aside.
Make the roux: In a large saucepan over medium heat, melt the butter. Whisk in the flour, stirring constantly for 2-3 minutes, until it becomes a light golden color.
Add milk and cream: Slowly pour in the milk and cream, whisking constantly until smooth. Continue cooking for 5-7 minutes, until the mixture has thickened.
Add cheese and seasonings: Reduce heat to low and stir in shredded cheddar cheese, salt, pepper, and paprika. Stir until the cheese is completely melted and the sauce is smooth.
Combine with pasta: Add the cooked macaroni to the cheese sauce, stirring until well-coated.
Bake (optional): If a baked top is desired, transfer the mac and cheese to a greased baking dish, sprinkle with breadcrumbs, and bake at 350°F (175°C) for 20 minutes, or until golden and bubbly on top.
