White Chili with Hominy

1 lb chicken breast cut up, ½" cubes

1 medium onion, chopped

1 tsp vegetable oil

1 can (15-½ oz.) White hominy, drained

1 can (15 oz.) White kidney or cannellini beans, drained and rinsed

1 can (14-½ oz.) Chicken broth

2 cans (4 oz.each) chopped green chilies

1 tsp garlic salt

1 tsp dried basil

1 tsp ground cumin

¼ tsp White pepper

¼ tsp cayenne pepper

1 cup sour cream

⅓ cup half and half

2 tsp minced fresh cilantro (divided)

In large saucepan, saute the Chicken (optional: boil chicken; cut into cubes then saute it) with onion in oil until chicken is no longer pink. Add the hominy, beans, broth, Chilies, and seasonings. Bring to boil. Simmer uncovered for 30 minutes Store overnight in refrigerator.

The next day, 1-2 hours before serving, add the sour cream, half and half, and the remaining 1 tsp cilantro. Simmer until ready to serve.
