Chop up your onion and bell pepper.
Cook your ground beef in a little bit of olive oil or butter over medium heat.
Once halfway cooked, add the onion, bell pepper, and taco seasoning, pepper, and garlic powder.
Cook that for a few minutes, then add the rest of the ingredients (minus the lime, cheese, and toppings).
Once it comes to a simmer, cover and turn to low/medium low.
Cook for 20 minutes, stirring once halfway through.
After the 20 minutes, add the lime, give it a stir and taste test to see if the rice is fully cooked, or if it needs more salt.
Sprinkle on the cheese, cover until cheese is melted, then you’re done!
Add your toppings.
