Choose potatoes that are roughly the same size.
After the potatoes have been cleaned, cut the larger ones in halves or quarters so the pieces are about the same size.
Add them to a pot of water, the spuds should be covered in 1-inch of water. Then add 1 tablespoon of salt and the rosemary.
Bring to a boil over medium-high heat, then reduce heat to low-medium, and simmer until the potatoes are fork-tender. This may take 10-20 minutes, depending on the size of the potatoes, check the blog post for details.
Once done cooking, drain and add the potatoes back to the pot or to a mixing bowl.
Drizzle with melted butter and olive oil. Season with salt and black pepper to taste.
Garnish with freshly chopped herbs and toss to combine.
Keep covered until ready to serve.
