Spanish Rice
  1. In a medium saucepan over medium heat, heat oil. Cook onion, stirring occasionally, until slightly softened, about 3 minutes.

  2. Add garlic and cook, stirring frequently, until fragrant, about 2 minutes.

  3. Add rice and cook, stirring frequently, until toasted and lightly golden, about 6 minutes.

  4. Stir in broth, tomatoes, salt, Sazón, oregano, cumin, black pepper, and cayenne.

  5. Increase heat to high and bring to a boil, then reduce heat to low.

  6. Cover with a lid and cook at a bare simmer until all liquid is absorbed, 18 to 20 minutes.

  7. Remove from heat, remove lid, then cover pot with a clean kitchen towel.

  8. Place lid over towel and let rest 5 to 10 minutes.

  9. Fluff rice with a fork; season with salt and pepper. Top with cilantro.
