In a pan, add olive oil, shallots and garlic over medium heat. Sauté for several minutes until shallot begins to soften.
Add chicken sausage and cook for ~5 more minutes, until sausage becomes slightly browned on the outside.
Add sun-dried tomatoes & toss until everything is combined.
Then, add orzo to the pan along with bone broth and half & half. Also season with salt, pepper, and garlic powder. Stir until combined and bring to a boil.
Then turn heat to low, cover, and cook for 12-15 minutes or until orzo is fully cooked and most of the liquid is absorbed. Stir occasionally!
Once orzo is done, gradually incorporate spinach and parmesan cheese until everything is combined.
