Shred zucchini and squeeze out the liquid. Shred carrots and chop green onions.
Whisk together shredded and squeezed zucchini, shredded carrots, chopped green onions, the eggs, shredded cheddar, and ⅓ almond flour until well combined. Seasoning with salt and pepper or your seasonings of choice.
Grease a baking tray lined with parchment paper and divide the mixture into equal portions. I used ½ cup- measuring cup. If you prefer smaller fritters, use ¼ cup to measure or a ice cream scoop.
Bake for 20-25 minutes or until golden brown at 200°C/ 400°F.
Serve warm or cold with some dip.
