Savory High Protein Veggie Fritters
  1. Shred zucchini and squeeze out the liquid. Shred carrots and chop green onions.

  2. Whisk together shredded and squeezed zucchini, shredded carrots, chopped green onions, the eggs, shredded cheddar, and ⅓ almond flour until well combined. Seasoning with salt and pepper or your seasonings of choice.

  3. Grease a baking tray lined with parchment paper and divide the mixture into equal portions. I used ½ cup- measuring cup. If you prefer smaller fritters, use ¼ cup to measure or a ice cream scoop.

  4. Bake for 20-25 minutes or until golden brown at 200°C/ 400°F.

  5. Serve warm or cold with some dip.
