Ground the walnuts in a food processor for a few seconds until fine.
Add the honey and egg whites and mix well with a spatula then add the sugar.
Place the mixture in the freezer for 30 minutes to firm.
Make 11-12 round cookies and place them into a bowl with powdered sugar. Lay them into a lined baking tray and top with 1 walnut and bake at 180C for 10-15 minutes.
