Start by frying off all the veggies for the sauce in some oil. Season and once they’ve reduced in size, add to the blender and blitz till smooth.
Fry off the spinach and kale and season, go back in with that blitzed sauce and stir. Add in the cream and stir again.
Go in with the orzo and veg stock, stir to combine and then cover and let cook for 10 mins.
Fry off the mushroom in some oil until charred, season and then coat in paprika.
Add the mushroom to the top of the orzo and add in the oven for 10 mins. Serve up with chives and yoghurt and enjoy!
