Place all the dry ingredients into a bowl then rub in your cold butter till it resembles breadcrumbs.
Add a pinch of salt then pour in your whey or milk.
Mix roughly in your bowl then tip out onto your surface and gently knead to bring it together.
Press into a flattish round then transfer to a baking sheet.
Cut into 4, leaving it together, then egg wash and bake in a preheated oven at 220c (fan oven) for 15 minutes till puffed up and golden.
Move to a wire rack for a few minutes before breaking apart and adding your toppings.
