Pineapple Jerk Black Bean Salad
  1. In a large bowl, combine black beans, bell peppers, red onion, pineapple, and cilantro.

  2. In a small jar, shake together olive oil, red wine vinegar, lime juice, brown sugar, thyme, allspice, cayenne pepper, nutmeg, cinnamon, and generous pinches of salt and pepper.

  3. Pour dressing over salad and toss to combine.

  4. Store in an airtight container in the fridge for 3-4 days.
