Banoffee Pie
  1. Make the cookie crust according to my recipe and press it into an 8-inch (20 cm) tart pan with a removable bottom. Refrigerate for a least 10 minutes to firm up.

  2. Slice the bananas and layer them on top of your cookie base.

  3. Spread the Dulce de leche over the bananas. Chill in the fridge for at least 2 hours or until firm.

  4. Carefully remove the pie from the tin and place on a serving plate.

  5. Spoon the softly whipped cream over the caramel, and grate over chocolate.

  6. Slice and enjoy with a cup of tea. Store any leftovers covered in the fridge for up to 3 days.
