Beat butter and powdered sugar for 2 minutes until light and fluffy.
Mix in flour, salt, and peppermint extract until just combined.
Add food coloring and fold in peppermint baking chips.
Cover and refrigerate for 30 minutes.
Roll into 1 tbsp balls. Bake at 375°F for 7–8 minutes, just until set.
Roll warm cookies in powdered sugar, then again once cool for a snowy finish.
