Skillet Chicken With Beans And Greens
  1. Preheat oven to 350F. Season chicken and place skin side down in a large, oven-safe skillet coated with half of the olive oil. Place over medium heat until fat is rendered and skin is crispy, 12-15 minutes. Turn and cook for about 3 minutes on the other side then remove to a plate.

  2. Add remaining olive oil to the chicken fat and saute lemon zest, garlic, pepper, and beans in there for about 3 minutes, then pour in chicken stock and bring to a simmer. Season with salt and pepper; add kale and let wilt slightly then nestle the chicken back in there and transfer to oven for 15 minutes to finish cooking. Finish with lemon juice and parmesan cheese and serve with crusty bread.
