Crunchy Chocolate Chip Rice Krispie Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

  3. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

  4. Beat in the egg and vanilla extract until well combined.

  5. Gradually add the dry flour mixture to the wet ingredients, mixing until just combined.

  6. Gently fold in the Rice Krispies and chocolate chips (and mini marshmallows, if using) until evenly distributed.

  7. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.

  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers might seem slightly undercooked, but they will set up as they cool.

  9. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

  10. Serve warm or store in an airtight container for up to a week!
