Make the teriyaki sauce: Combine all the teriyaki sauce ingredients in a saucepan (soy sauce, water, brown sugar, sesame oil, rice vinegar, corn starch, and ginger). Whisk to completely combine.
Heat over medium-high heat and bring to a simmer, stirring frequently. Simmer for 1-2 minutes or until the sauce thickens. Set aside.
Preheat oven to 400°F on Air Fry Mode.
Place parchment paper on a baking sheet pan. Lay salmon filets on baking sheet pan and spray with oil. Season tops of salmon with salt and pepper.
Air fry at 400°F for about 8-10 minutes or until salmon is cooked to your liking.
Divide the rice into individual serving bowls. Add salmon and top with your favorite toppings. Drizzle teriyaki sauce over the salmon and toppings.
