Pistachio Gelato Chia Pudding
  1. Blend the pistachios, water, maple syrup, and vanilla in a high-speed blender until smooth.

  2. Pour into a bowl and stir in the chia seeds.

  3. Refrigerate for at least 4 hours or overnight to set.

  4. Top with your favorite toppings—I added Greek yogurt mixed with matcha and crushed pistachios!
