Ingredients:
2 ½ pounds of sweet potatoes washed
¼ cup olive oil
⅛ teaspoon salt
One cup chicken stock
Method:
Line a rimmed cookie sheet with parchment paper
Cut sweet potatoes into 1 inch rounds
Mix potatoes with the oil and salt blending well
Place rounds on parchment paper
Bake in oven for 15 minutes
Turn potatoes for another 15 minute bake
Add stock to the tray
Steam potatoes for another 10 minutes
