Beef Barbacoa Grilled Cheese
  1. Season the cubed beef with salt and pepper, give it a good sear.

  2. Throw all the other ingredients (except cheese) in a blender or food processor and blend, then dump into the slow cooker. Add in bay leaves and close the lid.

  3. After about 4 hours, the chuck should be pull-apart tender. Separate consommé from beef.

  4. Butter up the skillet and toast bread, then build the sandwich. Cut and dip in consommé and cilantro.
