Cryo-seared Steak
  1. In a blender, combine 800g ice, 20% of ice's weight in salt and another 20% in water

  2. Blend together for ice brine

  3. Add your steak to the brine and let freeze for 20 minutes

  4. Remove meat from brine and blot it dry

  5. Add oil to pan at a level half the height of the meat

  6. Sear steak 2-3 minutes per side

  7. Add garlic and herbs to the pan

  8. Finish by cooking the meat through low and slow in the oven

  9. Rest, slice and serve
