Lemon Curd
  1. In a saucepan, combine sugar and lemon zest.

  2. Using your fingers, massage the zest into the sugar until it looks like wet sand.

  3. Add the egg yolks and whole egg to the pan. Whisk to combine.

  4. Whisk in the lemon juice, then sprinkle in the salt.

  5. Place the saucepan over medium-low heat, whisking constantly until it thickens (7-10 minutes).

  6. Remove it from the heat, mix in the butter and vanilla extract.

  7. Pour into a bowl and cover with plastic wrap.

  8. Let sit until cool.
