Add the Dijon mustard, garlic, lemon juice and zest, apple cider vinegar, maple syrup or honey, fresh thyme, salt, and pepper to a Mason jar. Pour in the olive oil and shake well.
In a salad bowl, combine the arugula, kale, goat cheese, roasted sweet potato and carrots, diced apple, candy pecans, and torn fresh mint leaves.
Pour the lemon thyme dressing over the salad and toss to coat.
